Preheat oven to 375°. Grease a 10" or 12" cast-iron or heavy skillet with cooking spray.
Separate biscuits and cut each into 6 pieces. Transfer to a large bowl. Add 1 cup pizza sauce, 1 cup cheese, chopped pepperoni, and 1 tablespoon basil and toss to combine. Spoon biscuit mixture into prepared skillet. Dollop with remaining pizza sauce. Top with remaining 1 cup cheese, sliced pepperoni, and 1 tablespoon basil.
Bake pizza, tenting with foil during the last 10 minutes, until puffed all over, baked through, and cheese is bubbly and light golden, 35 to 40 minutes.
Spoon pizza mixture into bowls. Top with torn basil.
