Step-by-step instructions
Combine 2½ cups freeze-dried strawberries, ½ cup dried strawberries, 4 pitted dates and 3 tablespoons water in a food processor; process until well combined and crumbly, 30 to 60 seconds. Add 1 cup oats, ¼ cup cashew butter and 2 tablespoons cashews; pulse until combined, about 10 to 15 pulses, stopping to scrape down the sides as needed.
Scoop about 1½ tablespoons of the mixture and place on parchment or wax paper. With slightly moistened hands, flatten into a 3-inch-diameter round (about ¼-inch thick). Place about ¾ teaspoon cream cheese in the center, then gently fold the mixture around the filling to enclose it completely; roll into a ball. Repeat with the remaining mixture and cream cheese.
Serve immediately or refrigerate until ready to eat (up to 1 week).
