Step-by-step instructions
Place ¾ cup pistachios in a food processor and pulse until finely chopped, about 12 pulses. Transfer to a medium bowl.
Pat dry 2 cups black beans and place in the food processor. Add ½ cup dates, 3 tablespoons almond butter, 3 tablespoons cocoa and ½ teaspoon salt; process until smooth and fully combined, about 45 seconds, stopping to scrape down the sides as needed.
Add 3 tablespoons chia seeds to the mixture. Set aside 1 tablespoon of the chopped pistachios in a small bowl. Add the remaining pistachios to the food processor; pulse to incorporate, about 3 pulses. Add ¼ cup chopped chocolate; pulse just until evenly distributed, about 2 pulses.
Portion the mixture into 2-tablespoon balls using a scoop or measuring spoon; place on a large plate. Lightly press the top of each ball into the reserved chopped pistachios, pressing gently to adhere.
Cook it tonight. Save it forever.
