Melting Cabbage
Melting cabbage turns simple cabbage wedges into a tender, savory side dish by first browning them, then braising them in broth and white wine. A splash of cider vinegar rounds out the dish.

Step-by-step instructions
Preheat the oven to 375 degrees F (190 degrees C).
Heat 2 tablespoons oil in a 12-inch oven-safe skillet over medium-high heat. Add cabbage wedges to the skillet, cut sides down. Cook until browned, 3 to 4 minutes. Turn and brown on the other side, 3 to 4 minutes. Remove from the skillet.
Add onion to the skillet and cook over medium heat until tender, adding additional 1 tablespoon oil, if needed, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
Add wine to the skillet. Cook until reduced by half, scraping up any browned bits on the bottom of the skillet with a wooden spoon, 2 to 3 minutes.
Return cabbage to the skillet. Season with salt and pepper. Add broth and bring to a boil.
Place the skillet in the oven. Bake, uncovered, until the cabbage is very tender, turning once, about 40 minutes.
Transfer cabbage wedges to a serving dish. Spoon braising liquid over the cabbage wedges. Drizzle with vinegar. Sprinkle cabbage with dill, caraway seeds (if using), and paprika.
